What exactly is

USDA Prime Beef?

Only 2-3% of all cattle in the U.S. receives the "Prime" classification, a coveted stamp of the highest distinction and flavor. This is precisely what we offer you at George Prime Steak!

The meat quality is our priority. We only select 'Gold Standard Black Angus' USDA Prime Beef. Our beef comes from selected farms in the Midwest of the USA that raise cattle humanely, are fed a corn-based diet, and are grown free of hormones. This makes for a rich, juicy, highly complex marbled steak that is mouth-watering to the last bite.

Our love of the freshest delicacies from the ocean combined with the refined cuisine of Japan and intense flavors from Peru result in a taste experience that makes the Raw Bar a highlight for gourmets.

Our Raw Bar is as personal and fluid as your dining plans. Start the evening with our Nikkei-inspired dishes or a dash of caviar or seafood tower accompanied by a glass or two of Champagne from our extensive menu and then journey on to the main event: Steak!

Whether spontaneous or planned, in-and-out or all-night long, casual or elegant; we welcome you with pleasure and pamper you with attention to detail.

Signature Aging

Process

Dry-Aging is a time-honoured process where meat is aged on the bone and exposed to the air at a controlled temperature just above freezing for several weeks or months. By exposing the meat to air, moisture is drawn out. The natural enzyme breaks down the muscles, tenderizing the beef, concentrating the color, deepening the texture, and ultimately developing the most intense flavors. Dry-aged steaks have a nutty roasted aroma accompanied by notes of truffle, butter, and popcorn. Among connoisseurs, it is considered the only way to eat steak.

Wet-Aging is a process where the beef is vacuumed-sealed in its juices and aged in a temperature-controlled meat locker for several weeks. This process tenderizes the meat with naturally occurring enzymes without any moisture loss. It distributes the flavor across the meat more evenly and retains the traditional steak flavor.

We dry and wet age our USDA Prime steaks in-house for no less than 21 days – whichever you prefer. For your customized dinner experience or special occasions, you can pre-select a whole cut of our beef and have it aged in our in-house humidors to your taste. Our award-winning sommeliers have assembled a collection of exceptional labels, cult wines and rare achievements from Caymus, Screaming Eagle, Opus One, Chateau Montelena and George's Boutique Pinot Noirs – to name a few. 

Our wine and Champagne collection is showcased throughout the restaurant in our impressive walk-in wine cellar, and brilliant rose gold refrigerators for guests to enjoy. 

Our sommelier team can advise guests on the perfect wine to pair with classic American steak dishes and fresh seafood inspired by Japanese-Peruvian Nikkei cuisine.
